Paleo Chocolate Covered Cookie Dough

OMG these are amazing and taste EXACTLY like full fat cookie dough!!!!!!! I was sooo amazed. My friend and co -worker Mariah Barnhart made these tonight because we were craving something sweet but it wasn't cheat meal friday yet so we came across these magical things!! Make them, and I swear you won't know your not cheating when you eat them! They are sooo tasty and took minutes to throw together. It is a recipe with ingredients that every kitchen should already have in it! Comment below and let me know how you liked the recipe! 



Ingredients:
1 cup almond butter
1/4 cup honey
2/3 cup shredded, unsweetened coconut 
1/2 tsp salt
2 tsp vanilla
1/3 cup dark chocolate chips
1 cup dark chocolate chips or dark chocolate 
1 tsp coconut oil 

Directions: 
  1. In a medium-sized mixing bowl, combine almond butter, honey, coconut, salt, vanilla and 1/3 cup of chocolate chips until well mixed together 
  2. Place the bowl in the freezer until dough is easier to roll into balls (this time will depend on how runny your almond butter is, if necessary add more coconut)
  3. Roll the dough into small (roughly 1") balls. 
  4. Place on parchment lined tray and place tray back in freezer once all the dough balls have been rolled 
  5. Melt the cup of dark chocolate and coconut oil in a double-broiler over low heat
  6. Dip the frozen balls into chocolate and place again on a parchment (or wax) paper lined tray
  7. When chocolate is still melted, sprinkle leftover coconut on top of each ball 
  8. Return to the freezer or fridge to harden
  9. Enjoy!
  10. *Store in freezer or fridge, as the outer dark chocolate melts quite easily!
