Potato Zucchini Pancakes

This recipe serves as yet another variation, or way to eat potato's, which seem to show up and be a staple for the Paleo/Primal diet. I love eating these for breakfast with an egg up on top, alittle avocado, and tapatio!!!! Can you feel your mouth watering???? Or for dinner on the side of a burger or meatballs or a big salad. The possibilities are endless experiment! Feel free to comment below with any other grand ideas you may have on how to eat this yummness!

Ingredients:
1 Large Zucchini (ends trimmed, grated)
1 Large Potato White or Sweet Potato (grated, i personally leave peels on)
1/4 Cup Flour (Brown Rice)
1 Egg
1/3 Cup Onion (finely diced)
Pepper, Salt, Garlic Powder to taste.

Directions:

1. Mix all ingredients together in large mixing bowl, grate the potato in last as the air will oxidize and turn it a nasty brown.

2. Preheat large skillet to medium heat, add a few tblsp's of oil.

3. When oil is heated through slowly laddle in the mixture to form 4 small 4 inch size pancakes.

4. Cook until golden brown on each side about 6-7 minutes.
