Baked Chicken Spaghetti Squash
I came up with this recipe out of desperation for a taste of this comfort food dish that my mom would make us kids growing up. I remember it being so yummy and always a family favorite in our house. SInce my eating habits have changed I reinvented it so that it would fit into my Paleo, clean eating way of life now! It turned out so good and you don't even know that its not the real deal! Ingredients:
- 2 cups Cooked Chicken (Shredded)
- 1 Large Spaghetti Squash, cooked
- 2 cans Cream Of Mushroom Soup (I get the fat free no sodium gluten free at sprouts)
- 1 cup Grated Almond Cheddar Cheese
- 1/4 cup Finely Diced Green Pepper
- 1/4 cup Finely Diced Onion
- 1 can Diced Green Chilies
- 1/8 teaspoon (to 1/4 Teaspoon) Cayenne Pepper
- Salt And Pepper, to taste (optional)
- 1 cup Additional Almond Cheddar Cheese
Instructions:
In a large mixing bowl mix together all ingredients listed above and then top it off with the Almond/Rice cheese! Place inside a 9x13 baking dish and cook at 350* in the oven till heated through about 20-30 minutes!
